2 cups all-purpose flour & 2 cups granulated sugar
¾ cup unsweetened high-quality cocoa powder
2 teaspoons baking soda & 1 teaspoon baking powder
1 teaspoon sea salt
1 cup buttermilk (room temperature)
½ cup vegetable oil or melted coconut oil
2 large farm-fresh eggs
2 teaspoons pure vanilla extract
1 cup boiling water (to bloom the cocoa)
Instructions
Preparation:
Preheat your oven to 350°F (175°C). Lightly grease two 9-inch round cake pans and line with parchment paper.
Dry Mix:
In a large mixing bowl, sift together the flour, sugar, cocoa, baking soda, baking powder, and salt. Whisk until well combined.
Wet Mix:
Add the eggs, buttermilk, oil, and vanilla extract. Beat on medium speed for approximately 2 minutes until smooth.

Carefully stir in the boiling water by hand. The batter will be thin, but this ensures a moist crumb.
Baking:
